Mixing color steps with brush vs palette knife

This question seems too simple but I am wondering what others are doing at the stage of mixing colors for the color groups.

As I am mixing my color groups for my next painting I am using the brush as Mark does, but my brush loads up with a lot of paint. I see Mark frequently cleaning off his brush with a paper towel. As I do this, it is costing me a lot of paint.

Is there a reason that I should use the brush vs using a palette knife where I can easily leave most of the paint on the palette? It seems like it would be more economical to use a knife for this stage.  Am I missing something?
